Why this wine?

Mushrooms bring a lot of umami, beetroot a sweet, earthy note. Umami and sweetness make tannin harsher and fruit less noticeable: choose a fruity red with soft tannins.

What matters here

Better not

A young, firm red with lots of tannin: the umami of the mushrooms makes it harsh.
