Why this wine?

A dessert needs a wine that is at least as sweet, or the wine tastes thin and sour. Coffee and cocoa are bitter and intensify bitterness and tannin: choose a sweet wine without tannin, or a sweet fortified wine.

What matters here

Sweetness in food makes wine taste less sweet and fruity, and makes bitterness, acidity and alcohol stand out.
Bitterness in food intensifies bitterness and tannin in the wine.

Better not

A dry wine, including dry sparkling: next to the sweet dessert it tastes sour and thin.
