Wine with salmon

Salmon from the oven, in puff pastry (en croûte) or as a salmon roll: it appears on the Christmas menus of all five major Dutch recipe sites. Often with lemon, dill or a creamy sauce.

Why this wine?

Salmon is rich and mild; lemon brings acidity. A sharp dish needs a wine with enough acidity, or the wine tastes flat. Choose a fresh white, or a light pinot noir.

What matters here

Better not

A tannic red: with oily fish it can taste metallic.
